Amylase is an important enzyme in your body. It helps break down and digest carbohydrates in the foods you eat from the point they enter your mouth to the point they reach your intestines. As it’s produced in both your mouth and your pancreas, it’s a useful indicator to ascertain how well your pancreas is working. If your levels of amylase are too high or too low, this could indicate a pancreatic disorder such as pancreatitis, often caused by alcohol abuse. Symptoms of pancreatic disorders vary, but often include a fever, nausea, pain in the top of your stomach and a loss of appetite.
